Easy Peasy One Pot Pasta

This is an easy no fail recipe to make pasta.  Even if you claim you burn water you can make this so no excuses.  On top of that you can impress the heck out of anybody; family, friends or a date.  Everybody likes pasta so it’s win-win.  This one pot pasta dish is suitable for vegan and vegetarian friends.  You can impress everyone all at once!

For this recipe we’ve used whole wheat pasta, it’s healthier but cooking is not quite the same as regular pasta.  Whole grains pasta normally has fewer calories, plenty of fiber, better nutrient profile and whole wheat has better protein than the processed white flour pastas.

Whenever we make pasta it is always whole wheat or whole grain pasta whenever possible.  However, no matter how good the pasta is and how nutritious you still need to eat fruits and vegetables.  You can’t live on pasta alone, although through 4 years of college I don’t think I ate much else.  My advice remains….eat a vegetable.

So if you’re looking to cook something super easy that does have whole grains…this is it!

One Pot Pasta, serves 4 or 2 with some leftovers

Ingredients

3 cloves of garlic, minced
2 big leaves of basil, chopped
1 tablespoon parsley, chopped
1/4 teaspoon red pepper flakes
1 Package of Whole Wheat Thin Spaghetti
1 Can of diced tomatoes in tomato juice
2 tablespoon olive oil
1 3/4 cups vegetable stock

What to do

  1. Grab a big stock pot and put in the chopped garlic, chopped basil, pepper flakes, olive oil, tomatoes and vegetable stock.  Turn the heat to high and bring it the whole thing to a boil, throw in the pasta and give the whole thing a stir making sure the pasta isn’t sticking together.
  2. Cover the pot and turn the heat down to low or medium/low depending on your stove, but it is still a slow boil and cook for 9 minutes.  Take off the lid and give a stir to make sure nothing is sticking together or to the bottom of the pot.  Let it cook for another minute.

You can serve with some fresh herbs if you have some on hand.  Add a little salt, pepper and Parmesan for taste.  You can use vegan Parmesan cheese if you would prefer to keep it vegan friendly.  Toss a salad to serve on the side and a nice glass of wine and you have a perfect acceptable dinner good enough to impress the harshest critic.
